A piece of local beef brisket, marinated in a mixture of aromatic spices for a week and then cooked in a steam oven for 12 hours. Served hot or cold in sandwiches or on a charcuterie platter. Our sausages are made from local and premium cuts of meat that are carefully produced using traditional techniques that give an excellent taste and texture that cannot be found in mass-produced sausages.
